Actually in Arizona, but a fantastic place with trestle tables all set out and a country band doing their stuff. Outside were two large BBQs where they were cooking the food. The key is to cook for 14hrs, keep the temp between 180 and 220, use mesquite charcoal and wood, rub with salt and pepper. And they reckon as long as you start with at least 7 hrs on the BBQ you can finish off in the oven.
Had a great night, the food was amazing and the atmosphere matched! We had met Ross from Colorado outside our hotel and had a great time with him too. T
